Over the past few years, the forty-nine-year-old Swiss biologist & DNA researcher Jose Vouillamoz has analysed exactly 1,368 grape varieties to compile the world’s first varietal lexicon – Wine Grapes – which he published in collaboration with wine experts Jancis Robinson MW & Julia Harding MW.
Of course, most wine lovers nowadays know how much the flavours & structure of wines are shaped by the elements of origin & terroir. But what role, exactly, does genetics play?
